Our friends Courtney and Derek are the owner-operators of Katsu + Papaya in Kailua Kona. Customers line up for their famous spicy poke nachos, the result of Derek's fishing and Courtney's creative recipe to prepare incredibly delicious bites.

Spicy Poke Nachos Recipe:
- 16 oz Sashimi Grade Ahi Tuna, cut into ½ inch cubes
- ⅓ Cup Kewpie Mayo
- 3 Tablespoons Sriracha
- 2 Teaspoons Kikkoman Soy Sauce
- 1 Teaspoon Sesame Oil
- 2 Tablespoons Tobiko
- 2 Green Onions, chopped for garnish
- Wonton chips, we use a local brand called Maebos
- Unagi Sauce
1. Begin by adding cubed tuna to a bowl and mixing the mayo, soy sauce, kewpie, sesame oil, and sriracha. Taste to see if the spice is at your liking. Then, add the tobiko and give another good mix.
2. Lay out your wonton chips and layer the spicy ahi. Be generous so you have the perfect chip to poke ratio. Garnish with green onion and drizzle unagi sauce on your nachos. Enjoy!
